a great way to relax

Well, we have returned from our weekend camping trip. It sure was nice to get away from it all. Camping is a simple way to reconnect to yourself, your family, nature…a sure way to relax. We enjoyed fun foods, sitting around the campfire, finished a good book, took bike rides through the forest. The kids enjoyed simple things like hide and seek and frisbee. We even worked up a scavenger hunt. All in all, great fun doing nothing!

camping, and what to cook

This weekend we are going camping. Just us. No church group, no basketball teams, no friends of the kids, just us! We are looking forward to it. We all really need it. But in the preparing for camping, which is tiring enough, I needed some new recipes for the campground. We will have a grill, a fire and a camp stove, so no real trouble. But just needed something new, something better.

I am no girl scout, (well, I was in Brownies, but they were too girly, playing jump rope and such!) so all we would ever eat camping is maybe hot dogs, sandwiches and the like. This time we will be needing three days worth of meals and snacks. My daughter doesn’t eat meat. So there are quite a few things for me to consider.

I came across several camping recipe website. One by the boyscouts, one on about.com. So I checked them out. There really are a lot of good recipes for camping. There are some really unique ones too.

We are going to stick with some of the usual fare, hot dogs (of course) and frito pie. But we will also try some of the foil packet dinners that are so popular with many campers. I’ve never done this before, so it will be a learning experience. Apparantly, you just wrap all your meat and veggies in heavy duty foil and lay it in the coals for about half an hour. We’ll see! I am looking forward to trying this.  I am sure I will learn something new while trying this new method out.
